There are a lot of inexpensive recipes around that call for a can of condensed soup. These soups aren't expensive, but they're processed, and they contain a HUGE amount of sodium. You can make these really easily yourself, for your health, and for you wallet.
Over medium heat
Melt 3 tablespoons of butter or margarine
Keep on stirring continuously and add in:
3 tablespoons of flour and 1/4 tsp salt
Stir until bubbly.
Using a whire whisk to prevent lumps
Slowing stir in 1 cup of milk (or a combination of liquids for certain soups)
Continue to cook this over medium heat until it's smooth and thickened. This recipe makes the equivalent of one 10 ox can.
Cheese: add 1/2 cup of cheese and 1/4 tsp dry mustard
Tomato: Replace milk with tomato juice, and add a little bit of garlic salt, onion salt, basil and oregano
Celery: Saute a 1/2 cup of chopped celery and a tablespon of chopped onion in margarine before adding flour
Chicken: :Usechicken broth or bouilion to replace half of the milk, Add 1/4 tsp of poultry seasoning, and some chopped cooked chicken if available.
